Will have to try this version. Just one thought…the tortillas will crisp up best if the meat is not so trimmed of fat, If just using the brothy part the tortillas will likely not hold up. Such a fantastic switch on tacos. Thanks Gina for simplyfiing birria. (I generally marinate the beef for a day before slow cooking for more flavor, too.)

I made this last week and still thinking about it! The corn tortilla did not work for me/us but the meat was so good. I used the leftovers for lunch the following day in a flour tortilla instead and YUMMY!! Will make again.

I made this recipe for a party. It was a huge hit! Absolutely delicious! This is just as good as, or better than the birria I’ve had in restaurants. I followed the recipe as written. I did not use the canned chipotles, but instead, followed the instructions for soaking dried chiles. I also used a cinnamon stick as suggested, instead of ground cinnamon.

These were really good! So easy to prepare. The flavors blended really well. When dipping them, I just grab them by my fingers and dipped them and put in the frying pan. They didn’t tear this way. I’m freezing the rest for next week. Yum!
