This is a go to. Whenever I am feeling meh about prepping for the week, this is what I make because it is quick and simple. Also, delicious! I am going to switch it up and try it with ground beef this week since I have a bunch that I need to use up. I also sometimes sub cauliflower rice which makes the recipe only 2 points. My whole family loves this one!

I’ve made this twice now and consider it a keeper! Quick advice, I’d drain the cooked juices from the chicken before mixing it with the hot sauce, otherwise it’s way to runny and the chicken doesn’t get very coated. I have also used cauliflower rice in place of, or half-and-half with, the rice to help the portions go farther for the calories.

I usually don’t prepare rice at home so when I googled how to make it I nievely prepared 3 cups uncooked rice instead of just one. The recipient still came to gather very bland but tastie I’m sure if I remake it in the future it will be better

So good!! I used smoked paprika instead of regular paprika and it was a great combo with the buffalo sauce!

I loved these the last time I made them. I planned them for this week.s lunch. I recently discovered how much I like bulgur. Swapping it for the rice brings these down to 4 pts each! Very excited to have them again.

I liked the flavors but it was a little dry/one note on its own. I added some ranch seasoning I had on hand to give the chicken more flavor than just hot sauce.

Next time would drizzle ranch or blue cheese dressing. Good recipe but needs some add-ins to make it complete.

Made this yesterday – doubled it as I knew we’d like it. I wish I would have quadrupled it! I have one tiny container left as everyone ate it for lunch (I have young adults living with me), one took it for her dinner, another young adult of mine took it for his lunch to work today. I was worried my youngest child would think it was too spicy – nope! My preteen LOVED it and had TWO bowls of it for lunch! This will be a REGULAR rotation of ours. I thought it’d also be a delicious filling for a burrito wrap – a handheld version! Thank you for this recipe!!!

This was such a great way to enjoy the flavors of Buffalo chicken! I added 3 celery ribs to the onions and corn to the bean-onion mixture. Topped with jack cheese and a dollop of ranch

Delicious and came together quickly! Will definitely be making this one again.
