I love this recipe! It’s versatile. I have it for lunch or supper. I do leave out the brine because it makes it too bitter for my taste. You can throw in whatever you have in the garden too.

Already wrote a review – just following up with a question. I am serving this to a friend who is gluten-free and I’m wondering what you would suggest would be the best swap-in for the orzo. I’ve researched a bit on the web and I’m thinking of going with brown rice. Some GF pasta is okay – not sure I’d like GF orzo though (I think it might tend to be mushy). Would appreciate any ideas!
